The unfermented pressed juice from 2018 was added to the 2019 base wine, creating the secondary fermentation, it underwent (as does all of Agrapart’s wines) 100% malo, non-dosé, sans soufre. It was aged sur lie for three years. This is a pure, high acid Blanc de Blancs where you can positively taste limestone emanating from the glass!
